Honey walnut cake

Ingredients:

  • 4 eggs (separating yolks and egg whites)
  • 3/4 cup vegetal oil (200ml)
  • 1 cup sugar
  • 2 cups flour
  • 3/4 cup plain yogurt
  • 2 tbs honey
  • 1 tbs baking powder
  • 200 g (1 cup) walnuts chopped

Procedures:

  • turn on your oven into 350ºF
  • separate the eggs and placing the egg whites in a bowl start whisking on low speed with the mixer for 2 minutes then high speed until they are like a foam and don’t feel from the spoon when you scoop and turn it upside down. Reserve it.
  • in a separate bowl place the yolks and sugar and start to whisk with the mixer until a light yellow color, add the oil, honey, yogurt and flour and whisk until they mix together and add the baking powder at the end, whisking just for some seconds.
  • add the walnuts and manually mix
  • pour into a greased baking pan and bake for 40-45 until you use a stick or a fork and they come out clean (without dough)
  • you can sprinkle some powered sugar and walnuts on the top to finish it.
