Egg bites

Ingredients:

  • 5 large eggs.
  • 1/2 cup cup of cottage cheese or cream cheese
  • 1/2 cup parmesan cheese
  • 2/3 cup veggies, some options: zucchini, carrots (shredded) or spinach . You can sautee if you feel like
  • 1/2  cup gruyère cheese shredded
  • 1/2 cup mozzarella or monterey jack, shredded
  • 2 slices cooked bacon chopped and baked in the microwave (between 2 layers of paper towels)
  • 1/2 tbsp fresh chives chopped

Procedures:

  • grease the muffin pan
  • warm the oven to 275º F
  • whisk the eggs
  • add salt and cottage cheese and whisk again until smooth
  • add the veggies along with the cheeses and mix
  • add the bacon pieces and mix again
  • pour the mixture into each greased muffin tin. fill each about 2/3 using an ice cream scoop
  • bake for 20-25 minutes
  • let them cool

Notes: you can also create your own versions using mushrooms, feta cheese, bell peppers, ham
