Spring pasta

It is fresh, creamy and you can use whatever you have in the fridge such as tomatoes, ham, cheese, zucchini, cooked chicken, bell peppers, etc, creating your signature version.

First cook the pasta them mix all the ingredients with mayonnaise (or yogurt and olive oil) and bake for some minutes until the parmesan crust is formed on the top.

Ingredients:

  • 1/2 lb short pasta
  • 1 tomato chopped or cherry tomatoes (1 cup)
  • ½ cup mozzarella shredded
  • ½ grated zucchini
  • ½ grated carrots
  • 2 tbsp corn
  • ½ cup olives chopped
  • 1 tbsp parsley
  • 2 tbsp mayonnaise
  • ½ cup olives chopped
  • 1 tsp ground garlic
  • ½ tbsp salt
  • 1 tsp oregano
  • 2 tbsp parmesan
  • 1 tbsp olive oil

Variations

  • ½ cup ham chopped
  • ½ cup mushrooms
  • 1 cup cooked broccoli
  • ½ cup bell pepper chopped
  • ½ cup cooked chicken breast chopped
  • ½ cup tofu chopped

Procedure:

1.preheat the oven 350º

Cooking the pasta:

2. . bring a pot of water to boil

3. add salt and oil (salty like sea water )

4. add the pasta

5. cook according to the packaged directions

6. drain the water from the pasta

Assembly:

7. add the pasta into the baking dish

8.add all the ingredients but the parmesan, drizzle olive oil, salt and whisk

9. sprinkle parmesan on top

10. bake for 20 min
