Birthday cake with dulce the leche (milk caramel )filling and marshmallow frosting

Considering that to make some classic birthday cakes can sometimes be a lot of work and requires several steps, this recipe is very easy to follow and delicious. 

Marshmallow ingredients 

(not required, if you want a naked cake, skip this step)

  • 3 egg whites  – room temperature 
  • 1 cup sugar 
  • ½ cup water 

Cake ingredients:

  • 5 eggs 
  • 2 cups sugar
  • 1 cup vegetable oil
  • ½ tsp salt 
  • ½ tsp vanilla extract 
  • 2 cups flour
  • 1 + ½ tbsp baking powder
  • 1 cup milk 

Filling ingredients:

  • 1 condensed milk can 
  • ½ cup whipping cream 

Procedure:

Filling:

  1. just remove the paper tag from the can, add water to a pressure cooker and turn on pressure for 27 minutes. 
  2. wait until all the pressure is gone to open the pan 
  3. let the can cool down (20 min)
  4. open the can, add into a bowl and whisk with the cooked condensed milk. 

Cake: 

  1. preheat the oven 350ºF
  2. grease a pan 
  3. use a stand mixer to blend the ingredients
    1.  Eggs and sugar until a light yellow color
    2. Oil, salt and vanilla (1 min)
    3. Flour  and milk until combined  (1 min)
    4. Baking powder  until combined (1 min)
  4. bake it for 40- 45 min  – until a toothpick or a fork come out clean without dough 
  5. remove from the oven and let it cool down for 10 minutes. 
  6. turn out onto cooling racks or a cutting board . Let it cool upside down 
  7. to assemble the cake you are going to spread the filling in a thick layer and then place the next layer on top, making sure it is level.

Marshmallow Frosting:

You can decorate your cake with sugar and fruits, or you can dig into one more stand mixer journey creating a delicious marshmallow frosting. 

7.using a stand mixer, beat the egg whites until firm peaks.

8.start on low speed with the mixer for 2 minutes then high speed until they are like a foam and don’t feel from the spoon when you scoop and turn it upside down. 

Meanwhile  – warm the sugar:

9.in a pan you are going to combine sugar and egg whites 

10.heat over medium heat until 248ºF

11.then you are going to pour this mixture into the egg whites firm peaks and continue beating for more 5 minutes, or until the bowl cools down 

12.spread this marshmallow on the top and sides of the cake

13.you can use a fork to create some lines or so. Let your creativity flow. You can also use some fruits to decorate. 

14.chill in the refrigerator for 30 minutes
